I made a bunch of stuffed peppers today using Italian sausage, ground beef, onions, garlic (of course) and various summer squash. Low carb.
It's waaaay too hot here and we're all struggling to keep things watered. I do have tomatoes though; trickling in. Enough to make fresh sauce for the peppers. I also had a Caprese salad yesterday. It's my favorite summer lunch.
But... I also like cukes, tomatoes and feta. I also have a variety of beans this year, which I'm freezing. I have made 16 loaves of zucchini bread so far... given away half of them. Prices are significantly higher. Eggs in particular. It takes six eggs for four loaves.
Glad to hear your garden is doing well. My garden is also on it's best year yet! I've been gardening here for 6 years. Greenhouse is up and it's fantastic.
