I grill year round because our grill is right outside the kitchen slider. Except days like today, where it’s 14 with gusts to 40 mph. It is frigid out there! I had to go out earlier 🥶

So tonight it’s homemade pizza with pepperoni on all and half sun dried tomatoes and banana peppers 😋. So good.

Tonight’s dinner. Very few carbs. And taco salad with my homemade roasted black bean salsa. 
So much Beef lately… pretty sure I’m no longer B12 deficient…

Any bakers here? I’m not, but I have frozen mixed berries, cream cheese, ricotta, lemons, and puff pastry. And other baking essentials, like sugar, etc, obvs lol. Any favorite recipes? I’m thinking danishes, but I’m struggling to zero in on a recipe. For some reason, I have it in my mind that danishes are very difficult to make. I love to cook, but am intimidated by anything more complex than a quick bread when it comes to baking (thought I surprised myself these past holidays by making Christmas cookies from scratch haha).

There are recipes on YouTube for an exceptional Italian pastry called Sfogliatelle ("clamshells"), made with ricotta, lemon, and layers of hand rolled butter pastry, plus at least one "cheating" version using puff pastry.

You could also search there for Pastiera, recipes -- Italian rice pies made with ricotta, cooked rice, and lemon or nutmeg. Puff pastry might work for crust.

A simple variation of the classic galette (super easy) or a fruit cobbler can topped with ricotta, using puff pastry instead of biscuit dough. And fruit turnovers or strudel baked with a dollop of ricotta in puff pastry would be easy and yummy!

Please do!  If you go with the ricotta pie, which is a lighter version of cheesecake, you can quickly stew the berries with a spoonful of sugar in a saucepan, cool, and spoon over it for a zesty touch.
