I got my flat tire taken care of. Tomorrow is a cooking day!
I am making Texas style chunky chili, the real way, with dried chilies... this is because we like it but also to thank, Jilly and her husband who did our laundry while our washer was down. It's her husband's favorite. I will also make a huge cast iron skillet of cornbread with cheese, corn and jalapenos, to go with it.
Last, I am making Hermit Bars. I don't know what they are but I saw a recipe and it looks interesting so I'm on it. Trying to decide whether to glaze with icing made with milk... or go with rum in the icing. Probably rum for this first batch (I feel there will be more), because Jilly like boozy baking!
So these are tomorrow's projects. Believe it or not, I expect to have all this done by 8 am. I just love the early morning.
What are you cooking and why?
Wow that sounds absolutely amazing! I haven’t been cooking a whole lot lately. I did make stuffed portobellos over the weekend with vegan cheese. They were good.
Oh and I made pancakes Sunday morning with fresh banana, blueberry and chocolate chips.
hmm no occassion really to cook, i cook almost everyday, unless we go to the restaurant or invited to friends and family's to eat there. tonight was just eggplant with onions, spices and scrambled eggs, and chopped hamburger served with basmati rice, and side salad with cucumbers and tomatoes, and radish.
I'll be making a coconut dhal later. I've lost my cooking mojo of late, so this is easy, tasty and nutritious. Plus there'll be plenty to freeze for another time 🙂

Dried peppers are toasted, and are now steeping in hot water, waiting to be blended into a sauce or paste.
I'm getting ready to brown 5# of cubed beef for the large batch of chili.
All this goes in the instant pot and voila!
